PNW Restaurants Offering Truffles
Andina - Portland, OR
A taste of Peru in Portland's Pearl District, they have lovely truffle dishes and make it a priority to source ingredients locally in the PNW, including their truffles.
Our dish of choice to highlight is the Quinotto con Hongos y Zapallo. Defining ingredients of this dish include Aji Limo marinated portobello, butternut squash, braised greens, and Oregon black truffles. Quinoa is an Andean crop and the seed of the Quinoa plant. It is high in protein and naturally gluten free. Peruvian culinary historians would identify quinotto as one of the seminal dishes of Novo Andean cuisine which celebrated pre Colombian Peruvian ingredients and endeavored to popularize them by preparing them with contemporary techniques. The Quinotto is prepared like a modern Risotto but replaces rice with Quinoa. The dish itself is vegan and gluten free.
Tumwater Vineyard - West Linn, Oregon
After we discovered Oregon truffles on Tumwater’s property, we decided to collaborate and transform that moment into a full Truffle Dinner experience. From shaved black truffle pasta to pheasant with white truffle and truffle custard, the menu is a true celebration of the season with their French-trained Chef Tucker Mortenson to thank!
Foglia Pasta - Beaverton & Portland Farmers Market, OR
Foglia mixes old world Italian pasta making techniques with a fresh, colorful, and artistic approach rooted in the Pacific Northwest. Using local ingredients and thoughtful design, Foglia creates pasta that is as beautiful as it is intentional. They are currently offering black truffle ravioli.
Truffles pair naturally with Foglia’s foods, like shaved truffle over their fresh made pasta and creamy Alfredo. The owner and chef also joined us for one of our organized truffle forays, bringing that firsthand connection to the ingredient straight into the kitchen.
Foglia’s goal goes beyond flavor. Their ravioli fillings incorporate nutrient rich ingredients and superfoods like flax, hemp, chia, spirulina, acerola, green tea, bee pollen, turmeric, local walnut and hazelnut, cocoa, beets, and fresh greens, creating pasta that supports both creativity and wellness.

Become a Foraging Partner
We currently have several dog hunting teams approved to sell their truffles at the Portland Farmers Market on Saturdays from January to March. As demand grows, we are looking for more partners.
Requirements for Partners:
Every truffle must be dog-found.
Ownership of forest or written lease with landowner, plus signed state foraging permission forms.
Letter of recommendation from established peers such as PNW Truffle Dogs, Oregon Truffle Festival, Truffle Dog Co., or other recognized professionals or training organizations.
Wild Mushroom Buyer Verification form for all truffle sales.
A spirit of cooperativeness. Assistance selling at the farmers market is welcomed and appreciated. All shared information will be protected with a non-disclosure agreement regarding hunting locations.
